Recipe for a delicious risotto with vegetables and turmeric ingredients: 1 eggplant
1 red pepper
2 zucchini
300 g risotto rice (arborio rice)
1 liter of water
1 cube of vegetable broth
1 onion
4 c. to s. olive oil
20 cl of dry white wine
10 g of butter
2 tbsp. to s. of Curcuma
40 g grated Parmesan cheese
Preparation: 1. Boil the bouillon cube in the water.
2. Slice the onion. Wash the vegetables and cut them.
3. In a frying pan, heat half of the olive oil and melt the onions. Pour the rice, stir until it becomes transparent then add the white wine followed by the broth.
4. In a skillet, heat half the butter with turmeric and discard the pepper. Cook for 5 minutes, stirring and reserve. Stir in the remaining oil in the pan and pour in the eggplant, brown for 5 minutes and mix in the rice with the reserved pepper.
Ten minutes before the end of cooking, pour the zucchini into the risotto. After 35 minutes add remaining chopped butter and parmesan cheese.
