Guar (gum)
The Guar gum is a substance extracted from the seed of a legume (Cyamopsis tetragonoloba) or Cyamopse with four wings). It is very often used as a thickener, stabilizer and natural emulsifier in the food industry. Effective hot as cold, the Guar gum can thicken a liquid (grout, sauce...) and to give the lightness and the softness of the bakery preparations. The Guar gum is suitable for the preparation of gluten free foods.
